A new adventure beneath the surface.

If you've visited us before, you'll know how much we love using the incredible produce we have right here on our doorstep. Living and cooking in Shetland means being surrounded by one of the most amazing natural larders in the world.
Although John is experienced in diving in the warmer seas of The Philippines, he decided to take on a new challenge right here in Shetland!
He recently started to take the first steps to learn how to free dive in the colder waters here in Shetland with Peter from Free Dive Shetland Atlantica. Stepping into the sea with nothing but a single breath gives you a completely different appreciation for the underwater world. It's peaceful, exciting, and incredibly humbling, and John can't wait to experience it here in Shetland.
Another part of this journey is learning more about foraging along our coastline. From edible seaweeds to wild coastal plants and shellfish, Shetland has so much to offer if you know where to look. John's excited to discover more new flavours and ingredients that reflect this place we call home.
None of this would be possible without Peter. His knowledge of Shetland's waters, free diving, and sustainable harvesting is inspiring, and we are grateful to be learning from someone who has such a deep respect for the sea.
This isn't about changing who we are—it's about deepening our connection to the ingredients we already love and sharing that passion with everyone who visits us. As John continues learning, he'll share some of the adventures, the successes (and a few challenges too!), and hopefully, you'll see some of that inspiration making its way onto our menus.
